Delicious Thanksgiving Beef Recipes

Texas Beef Mushrooms

Thanksgiving is next week! Here on the ranch, we are busy planning and preparing for the big feast. And while beef isn’t something most people think about for this holiday, our Texas table is full of delicious Thanksgiving beef recipes every year.

Don’t get us wrong, we love turkey, but beef is the highlight of our Thanksgiving dinners. Here are three of our favorite recipes to inspire you this year.

Beef and Blue Cheese Stuffed Mushrooms

Every holiday meal needs an excellent appetizer to keep people satisfied while the main dishes finish cooking. And these addictive little stuffed mushrooms are the perfect crowd-pleaser. Loaded with Premium Quality Texas Ground Beef and sharp blue cheese, they’ll have everyone coming back for more.

You’ll need:  

  • 35 large white or cremini mushrooms 
  • 1 pound Premium Quality Texas Ground Beef
  • 1/2 cup crumbled blue cheese
  • 1/2 cup Italian style bread crumbs
  • 1/4 cup fresh chopped parsley
  • 1 tbsp chili powder
  • 1/2 tbsp garlic powder
  • 1/2 tbsp cracked black pepper

Once you’ve gathered everything, preheat your oven to 375°F.

  1. Remove and reserve the stems from the mushrooms.
  1. Finely chop the stems until you have a 1/2 cup. You can discard the rest.
  1. Combine the Premium Quality Texas Ground Beef, chopped stems, blue cheese, bread crumbs, parsley, and spices in a large bowl. Mix thoroughly. 
  1. Spoon the beef mixture evenly into the mushrooms. Don’t be afraid to fill them to the brim, so there’s a lot of the stuffing mix in each mushroom cap.
  1. Place the stuffed mushrooms on a sheet pan covered in non-stick foil and bake at 375°F for 15 – 20 minutes.

Thanksgiving Dressing with Spicy Beef and Dried Peaches

When it comes to Thanksgiving dinner, nothing says tradition like a delicious pan of dressing. In this version, we complement the heat of sauteed jalapeños with the sweetness of dried peaches. Here’s everything you’ll need:

  • 1 pound Premium Quality Texas Ground Beef
  • 2 bags (12 ounces) unseasoned stuffing mix
  • 2 cloves of garlic, minced
  • 2 stalks of celery, chopped
  • 1 large white onion, chopped
  • 1 small jalapeño, finely chopped 
  • 5 leaves of fresh sage, finely chopped
  • 1 cup diced dried peaches, chopped
  • 2 tsp kosher salt
  • 2 tsp cracked pepper
  • 1 tsp chili powder
  • 4 tbsp butter
  • 4 cups beef broth

After you’ve gathered all the ingredients, this delicious dressing comes together in a snap. 

  1. Preheat your oven to 350°F.
  1. In a large pan, brown your Premium Quality Texas Ground Beef over medium-high heat until it’s cooked through. Make sure to stir occasionally and break up any large pieces.
  1. When the meat is done, set it aside in a large bowl.
  1. In the same pan, on medium heat, melt the butter and saute the onion, celery, garlic, and jalapeño. When the onions become translucent, and the celery is soft, add in the chopped sage. Give the pan a quick stir to incorporate the sage, then pour the contents of the pan into the same bowl as the meat. 
  1. Stir in the stuffing mix, beef broth, dried peaches, salt, chili powder, and cracked pepper. Mix thoroughly until the stuffing has absorbed all of the liquid.
  1. Spray a large baking dish with cooking spray and add in the dressing mixture.
  1. Cover with aluminum foil and bake at 350°F for 30 to 40 minutes. Don’t overcook, or the dressing will become dry.

Smokey Slow Cooker Pot Roast

For this delicious Thanksgiving beef recipe, you’ll be pulling out your trusty crockpot. That’s right! Why can’t this lowly appliance have a starring role in a major holiday feast? 

Using a slow cooker makes this dish super simple, and honestly, that’s the whole point. It frees you up to focus on what the holidays are really about, your family. 

To start, you need to buy the proper cut of meat. We recommend one of our Premium Quality Texas Beef Company Roasts. They’re grass-fed, grain-finished, and always hormone and steroid-free. Here’s what you’ll need:

  • 1 4lb Premium Quality Texas Beef Company Rump Roast
  • 2 tbsp Worcestershire sauce
  • 2 tbsp cooking oil
  • 1 tbsp Kosher salt
  • 1 tbsp coarse ground black pepper
  • 2 cloves of garlic, chopped
  • 2 stalks of celery, chopped
  • 1 medium onion, chopped
  • 1 large carrot, chopped
  • 2 tbsp oregano
  • 1/2 cup red wine
  • 1 cup beef stock
  • 2 dashes of liquid smoke

Instructions:

  1. Season meat with Worcestershire sauce, salt, pepper, and oregano.
  1. Heat a skillet with the cooking oil, brown the beef for 5-6 minutes on each side, and then place it in the slow cooker.
  1. Add the vegetables and pour the red wine, beef stock, and liquid smoke over the meat. 
  1. Set the slow cooker to LOW and cook for 8-10 hours or until a knife slides through the meat easily.
  1. Remove the Pot Roast and place it on a serving dish. Spoon the cooking liquid over the top.

Get ready. This roast is melt in your mouth delicious and goes perfectly with all of the traditional Thanksgiving sides.
