Ingredients for Our Valentine’s Day Steak Recipe

We absolutely love our best Valentines’s Day recipe: Pan Seared Filet with Florentine Sauce. The ingredients and preparation are simple, but the flavors are complex. You’ll quickly find everything you need in any supermarket. Here’s your shopping list:

  • 2 Premium Quality Texas Beef Filets (order here)
  • 2 6 oz bags baby spinach, roughly chopped
  • 2 cups baby bella mushrooms, sliced
  • 3/4 cup white wine
  • 1/2 cup sour cream, room temperature
  • 2 cloves of garlic, finely chopped
  • 1 tbsp Dijon mustard
  • 1 tsp fresh rosemary, finely chopped
  • olive oil for sauteing
  • salt and pepper to taste

How to Prepare Our Valentine’s Day Steak Recipe

After you’ve gathered all of the ingredients, it’s time to start cooking. But don’t be intimidated by the long list of steps below. Honestly, our Valentine’s Day steak recipe comes together in a snap. Just read everything over and be ready with what you need. The finished Valentine’s Day steak recipe will be totally worth the effort.

Here are the easy steps:

  1. Remove your Premium Quality Texas Beef Filets from the refrigerator about an hour before cooking. Generously season with salt and pepper and allow them to rest on the counter to come up to room temperature.
  1. Preheat your oven to 425 F.
  1. On the stove, preheat a large, oven-proof skillet over medium-high heat. 
  1. When the pan starts to smoke, add a splash of cooking oil and sear your steaks for two minutes on both sides or until evenly browned. There will be some smoke, so ensure your cooking vents are turned on, high.
  1. Transfer the two steaks, still in the pan, to your preheated oven, and roast to your desired doneness. This should take about 4 – 6 minutes but will depend on the thickness of your filets and how close to room temperature they were when you started cooking them. Pro tip: Use an instant-read thermometer to temp them before you place them in the oven to give you a better idea of how much longer they’ll need to cook.
  1. Remove the filets from the oven when they reach an internal temperature of 125 F for medium rare or 135 F for medium. Place them on a cutting board to rest while you make the sauce.
  1. Return the filet pan (minus the filets) to the stove on medium-high heat. Add another splash of oil and the mushrooms. Saute, stirring occasionally, until softened and starting to brown. 
  1. Add the chopped garlic and rosemary and continue to cook until the garlic caramelizes.
  1. Deglaze the pan using the wine. Make sure you scrape the bottom of the pan to incorporate all the delicious beef flavors from cooking the steak.
  1. Add the mustard to the sauce and stir vigorously to incorporate.
  1. Add the spinach and mix until it starts to wilt. 
  1. Remove the pan from the heat, and stir in the sour cream and salt and pepper to taste.
